From the gentlemen who cleared our plates as soon as we desired fresh ones, and remembered that we liked the polenta and provided a hot replacement when our plate went empty, to the various servers who refilled our wine glasses, to the gauchos who provided extremely efficient service and expertly cooked meat, we were continually impressed. Restaurants don't often display such teamwork when staff is covering a section, but we appreciated the "we're all serving you together to ensure your enjoyment" vibe that permeated the atmosphere.
